Coconut Butter Bread

This is a Gluten-Free and Nut Free bread that Pam & Terri Tried & Tested and approved!

 

 

1 cup Coconut Butter (coconut manna)

5 Eggs, room temp

1/4 cup Coconut Oil

1/2 teaspoon Sea Salt

3/4 teaspoon Baking Soda

Preheat the oven 300 degrees. Grease a 5x9 inch loaf pan. Place jar of manna into a pan of hot water to soften the coconut. This will take about 10-20 minutes. Stir the coconut butter to make it consistent. Put all the ingredients into a bowl and mix with a handheld blender. Get rid of all lumps! It should be like a cake batter.

Pour batter into the loaf pan and bake 40-50 minutes. Let it cool for 10 minutes. Store in the fridge.

Do not eat without cooling nor pack it into a lunch or storage before it cools completely! Allow it to cool in the fridge first!!
