Baked Summer Vegetables

Moving into the warmer weather season, it is time to get to the Farmer's Market! Take advantage of all the fresh vegetables and herbs that are now available!

2 Yellow Squash, cut into 1/2 inch rounds

1 Zucchini, cut into 1/2 inch round

5-6 Cherry Tomatoes

1 Tbsp Olive Oil

2-3 pinches of Sea Salt

1/2 Tbsp Fresh Oregano, cut up

1 Tbsp Fresh Basil, cut up

Preheat oven to 350 degrees. Mix all ingredients in a large bowl and then place in a baking pan. Bake uncovered for 30-35 minutes. Feel summer in your belly!!

**Depending on when you visit, different veggies and herbs will be available at different times. Experiment with using your favorite ones and eat with the season!
