Chia Seed Pudding
Chia seeds are nutritional powerhouses! This edible seed contains a healthy source of fiber, Omega-3 fatty acids, protein, vitamins and minerals!
Here is a simple and quick recipe for making a chia seed pudding you can easily use for breakfast or a healthy dessert.
· 2 cups organic coconut milk
· ½ cup organic chia seeds
· Variations: You can keep plain or add a sweetener to your pudding base before it sets. A dash of cinnamon, vanilla extract or maple syrup.
Whisk coconut milk and chia seeds in a bowl. Pour into a glass mason jar or any glass container, seal tight and place in the refrigerator. Within the first hour, stir or whisk a few times to help it gel evenly and prevent seeds from falling to the bottom. Put in refrigerator for at least 4 hours or overnight.
I like to make the night before and have it ready to take on the go the next morning for breakfast. Top with granola or various fruits including strawberries, bananas or blueberries! If making for a dessert try adding a topping of honey! There are several variations you can make with this simple recipe. Experiment with your favorite toppings and have fun!
